SA Gold Welsh rarebit

Ingredients

500g Welsh cheddar

200mls milk

1/2 pint SA Gold

4g flour

50g Welsh wholegrain mustard

20mls Worcestershire sauce

5g fresh garlic

30g breadcrumbs

salt/pepper to season

1 organic bloomer

How To Make

1. Place the cheese, SA Gold, mustard, breadcrumbs and half the milk into a saucepan. Heat until the cheese has melted.

2. In a separate bowl whisk the remainder of the milk with the flour until it forms a smooth paste. Make sure there are no lumps.

3. Add the flour mix to the rarebit and heat gently. Bring to the boil, stirring continuously with a large spoon.

4. Take the mixture off the heat and allow to cool.

5. Cut the organic bloomer into chunky slices and with a palate knife spread the bread with the rarebit mixture. Grill until golden brown.

6. Enjoy with the rest of your SA Gold.
